Management/Leadership Handbook: MAKJAK's Smokehouse: Take a Bite into Management
Training can come in a variety of forms, such as a lecture, personal coaching, online training, a printed document, a game, or even a handbook. We had very little instruction from our professors for this assignment, so we turned to brainstorming ideas to begin the process. Our creativity was challenged in the first meeting, but we finally decided to make our handbook a menu, and the rest is history. As the designated leader of the project, I was there to organize group meetings, delegate tasks, and follow-up on the final printing and lamination of the final product.
Creativity was well used in this project, but if I ever make a handbook in the future, it will be more clear and concise rather than overly descriptive and comical. If I expect my subordinates to read and understand this handbook, I should be able to understand it as well. I will test it out personally and make sure it is clear by describing the theories or principles to someone else, and make changes from there. Sometimes, life is all about learning from your mistakes. I can definitely say this project prepared me to develop something for training in the future.

Analytical Report: How Can BYU Catering Better Control Foodservice Costs?
For my technical writing class, I chose a topic that was near and dear to me: managing costs. At the time, I was in the middle of my food production management classes and I was interested in learning more about the role of management in making changes to improve revenue. In my paper, I analyzed the complexity of the system, but also the details of the business that I worked with on a daily basis. I believe there is always another way to look at the same problem, and as a divergent thinker, I love to think of the possibilities.
Educational Game: Whose Food Is It Anyway?

When I thought I was stretched enough with developing the handbook, we received another assignment to create a game. I believe playing games is one of the best ways to learn. I was the leader, or CEO, of this group project as well, and my responsibilities included organizing meeting times and delegating tasks for the members. For the presentation, we had volunteers come up and play our game. The questions were based on the things students would be learning from the ServSafe course. If you can imagine, watching people act things out was way more entertaining than a powerpoint presentation on safe and clean cooking methods.

Budget Assignment
This assignment stretched me to think about possible changes to improve the condition of the budget in a hospital's clinical nutrition department. We worked in teams of three to brainstorm possible changes and then combined our efforts into the document below. In our hypothetical situation, we started out with a lot of debt. However, we proposed some plausible ideas to improve our situation and I believe we would see some positive effects in the upcoming years of this hypothetical hospital.
Reading Journals
During tour senior year, we were required to create reading journals twice a week to demonstrate our ability to summarize ideas and comprehension of the assigned reading materials. It also gave us an opportunity to express any experiences, thoughts, or questions to our professor stemming from the readings. Reading materials included chapters from textbooks and articles in our packet. I have included a handful of reading journals for your perusal.
